  • 120g coles brand 4 leaf salad mix packet
  • 180g south cape persian fetta
  • 1 3 cup walnut halves toasted

  • preheat oven to 160c or 140c fan place lamb shoulder in a baking pan and cook for 4 hrs
  • meanwhile brush sweet potato with oil and season place on a baking tray and cook for 40 mins until tender place salad mix fetta and walnuts on a platter add sweet potato and drizzle over fetta oil toss to combine
  • carve lamb and serve with sweet potato salad
